The fall pour: five houses, one season.
Fall does not announce itself on this coast with frost. It comes as earlier evenings, a cooler edge on the harbor air, and the town's bars turning their attention to bourbon, apple, spice and smoke. The season now has a short list of addresses. These are the five houses pouring it properly — one pour apiece, in one case three — and the rooms each glass belongs in.
I21 Oceanfront
The Autumn Bourbon Sour, served in the McFadden Building on the oceanfront: Old Forester 86 bourbon, fresh lemon, and a house apple-cinnamon syrup. It is a whiskey sour dressed for the season rather than reinvented for it, and it belongs to the hour the room was built for — order it while there is still light on the water.
IIA Crystal Cove
Two pours here, and the house declines to choose between them. Yuzu's Perfect Pear is the bright one, pear lifted by citrus; the Apple-rol Spritz is the lighter hand, an orchard turn on the spritz. Both suit the room — old-Hollywood polish gathered around a 24-seat central bar, and a pair of drinks mixed to be seen at it.
IIIA+O, Balboa Bay Resort
The Smoked Old Fashioned at A+O, the restaurant and bar at Balboa Bay Resort, is the traditionalist of the five: WhistlePig bourbon, barrel-aged maple syrup, orange bitters and a brandied cherry, with smoke over the glass. Nothing in the build is new, and nothing in it needs to be. This is the pour for the waterfront end of an evening.
IVOlea
Dad's Root Beer is nostalgia rebuilt by serious hands: bourbon infused with root beer, sweet vermouth and Montenegro, finished with a burnt cinnamon stick. It reads playful and drinks grown-up — the most constructed glass on this list, and the one we would order a second time in the same week.
VRothschild's
Rothschild's, in Corona del Mar, is not settling on a single pour for the season — it is pouring a festive trio: an Espresso Martini, the Roth Sour, and the Caliente Clásico. Coffee, citrus and heat, three different answers to the same cooling evening, under one CdM roof.
A note on order: the sours and spritzes open an evening; the smoked and stirred drinks close one. Start at the oceanfront or up at Crystal Cove while the light lasts, and let Balboa Bay or Olea have the last word. The season is short and the evenings are already drawing in — pick the room that suits the night, and order the pour it made for it.
